New Orleans is known for many things. At the top of the list is the poboy. This traditional, iconic sandwich from Louisiana is often made of French bread, a protein, usually a meat or fried seafood, and ‘dressed’ to your liking. Often overshadowed by the fancier seafood dinner, the poboy has grown in demand since its official introduction in 1929. And Jerry Hendrick knows exactly about this demand.
Seafood in Demand
In 1966, the Hendrick’s family opened a grocery store that ended up serving more than deli items. Short Stop Poboys, located just outside of New Orleans in the town of Metairie, saw a need to serve the community simple yet delicious, traditional dishes. Jerry Hendrick, owner of Short Stop Poboys, was just a kid when his father started running Short Stop. Hendrick later took over the family business that has proudly served the community for 52 years now.
Starting out with hot roast beef and cold cut poboys, this neighborhood grocery store turned poboy shop actually didn’t serve seafood poboys when they first opened. But due to demand, Short Stop began serving the infamous shrimp and oyster poboys in the early 70s and never looked back. In fact, Hendrick’s second favorite item on the menu is the shrimp poboy. A mound of shrimp or oysters (or for the adventure seekers both) are lightly battered and fried to perfection, encased by French bread and dressed with mayonnaise, tomato and lettuce. These seafood products come from Piazza Seafood.
