Description
Alligator is a freshwater reptile. Its white meat is from the tail. For that reason, it is a tender, juicy tenderloin that is mild in flavor, low in fat and high in protein. The tail meat is most often compared to the taste of chicken and similar in texture of veal. The majority of alligators come from freshwater in the southeast United States with Louisiana having the largest alligator population in the United States.
