Little neck clams are the smallest of the clam family. They are tender with a mellow flavor. These small, hard shell clams were served in some of the best restaurants in New York as well as European capitals in the mid-to-late 1800s and were quite the delicacy. These specific clams hailed from Little Neck Bay in Long Island, New York thus the name “littleneck clam” was adopted to describe this small variety.
Littleneck clams come frozen and vacuum packed. Once thawed, littlenecks are perfect for white or red clam sauce over pasta. They are also great for steaming with butter, white wine and herbs.
