Cod is a lean, mild tasting fish. It is tender-firm and remains white in color after cooking. Cod live in cold, deep sea waters. Its history dates them back to the Viking period (as early as 793 AD).

Cod fillets come individually frozen. Thaw cod fillets in the refrigerator or submerge in cold water. Cod fillets are often deep-fried as in the popular dish, fish and chips.
