Crawfish tail meat is from the tail of the crawfish. It is sweet and succulent with a medium to firm texture. Crawfish or sometimes called Crayfish are freshwater crustaceans that look like little lobsters. There are over 400 species of crawfish worldwide, over half are indigenous to North America. Approximately 90 percent of the farmed crawfish in the United States come from Louisiana.
