Whole crawfish comes pre-boiled and is easy to prepare. Remove the tail from the body and suck or pick out the sweet, succulent meat. Crawfish or sometimes called Crayfish, but never in New Orleans, are freshwater crustaceans that look like little lobsters. There are over 400 species of crawfish worldwide, over half are indigenous to North America. Approximately 90 percent of the farmed crawfish in the United States come from Louisiana.
