Description
Drum are saltwater fish found in coastal waters. Drum fish have a mild taste with a meaty texture. The Drum meat is comparable to Red Snapper and cooks up white. During spawning season, Drum use special muscles rubbing against their air bladder to produce a “drumming” sound for which they are named.
Product Preparation
Finfish should be stored in the refrigerator and used within 1 to 2 days after purchase. It’s a good idea to store it on ice in the refrigerator to keep it as cold as possible. If the fish won’t be used within 2 days, wrap it tightly in moisture-proof bags (so the fish won’t dry out) and store it in the freezer.
When cooking finfish, internal temperature should be a minimum of 145°F when checked in the center of the thickest area of the fish.
