Mackerel has a shiny skin and an off-white meat. Shime Saba is cured mackerel. Fresh mackerel is first cured in salt to firm up the fish and give it that salty flavor. It is then marinated in rice wine vinegar. Mackeral fish in which Shimi Saba are made, are found in temperate and tropical waters, mostly off the coast.
Mackerel used for Shimi Saba is frozen. Thaw and serve.
