Pompano is a flat-bodied, marine fish. Its fillets have a sweet, mild flavor with a pearly white flesh. This fish is firm but finely flaked. Pompano is commonly found off the coast of Florida in the United States.

Pompano fillets arrive frozen. To thaw, place in refrigerator or submerge in cold water. Fillets are most commonly broiled with lemon and butter.
