Like the Gumbo Crab, Soft Shell crabs are also Blue Crabs, just in their molten state. When they shed their shell for summer, they lose the hard outer shell leaving a thin-paper shell. Soft shells have a mild, tangy flavor with sweet and tender meat. Traditionally, the whole crab (shell left on) is fried or grilled.
