Description
Easy to identify because of the spots on its elongated body, Speckled Trout is a small flake fish. Interesting enough, this meaty fish is not actually part of the trout family. Croakers and Redfish call this fish a distant relative.

Product Preparation
Thaw frozen trout fillets in the refrigerator or submerge individually packaged fillets in cold water. Trout is delicate in taste so it can be easily overpowered by sauce. Cook with butter and simple seasonings.
